Summary

At la Boîte à Champignons, we want people, cities and businesses to think in a more circular way. How do we make it happen? By producing fresh food from food waste.
Every week, we collect used coffee ground in Paris and its suburbs, we transform it locally into delicious oyster mushrooms by people doing job integration programs. Those mushrooms are cooked by famous French chefs, but also by you, indviduals thanks to our ready-to-grow kits. Finally, the remaining substrate is used as a natural fertilizer to nourish the soil. So it’s a 100% local, zero waste and solidarity project!
